  • 4 medium zucchinis, sliced Slice thin for better texture
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded Load up for extra cheesiness
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1/2 cup pepperoni slices Can substitute with other toppings like sausage or mushrooms
  • 1 tablespoon Italian seasoning Adjust spices to taste
  • to taste Salt and pepper Adjust based on preference
  • Olive oil for greasing Use to grease the baking dish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with olive oil.
  3. In a large bowl, mix the sliced zucchinis, bell peppers, onion, and Italian seasoning. Season with salt and pepper.
Layering
  1. Layer half of the zucchini mixture in the baking dish.
  2. Spread half of the marinara sauce over the zucchini.
  3. Sprinkle half of the mozzarella cheese on top.
  4. Add the pepperoni or other toppings.
  5. Repeat the layers with the remaining zucchini mixture, marinara sauce, and mozzarella cheese.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  2. Let it cool for a few minutes before serving.

Notes

This casserole keeps in the fridge for up to 4 days or can be frozen for up to 3 months. If there's too much moisture from the zucchini, pat them dry with a paper towel before mixing.
