Ingredients
  

For the Dumplings
  • 1 lb ground chicken (thigh meat preferred for moisture)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic (minced)
  • 2 green onions (finely chopped)
  • 1 tablespoon cornstarch
  • 1 teaspoon rice vinegar
  • ½ teaspoon white pepper
  • 30-40 pieces wonton wrappers
For the Broth
  • 6 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine or dry sherry Substitute if unavailable
  • 1 teaspoon sesame oil
  • 1 thumb-sized piece ginger (sliced)
  • 2 cloves garlic (smashed)
  • 2 scallions (cut into thirds)
  • a few drops chili oil (optional)
  • to taste salt
For Serving
  • Thinly sliced scallions
  • Fresh cilantro leaves
  • Chili crisp or chili oil (optional)
  • A squeeze of lime for brightness

Method
 

Prepare the Chicken Filling
  1. In a bowl, combine ground chicken, soy sauce, oyster sauce, sesame oil, ginger, minced garlic, green onions, cornstarch, rice vinegar, and white pepper. Mix well until fully combined.
Fill the Wontons
  1. Place a wonton wrapper on a clean surface. Add about a teaspoon of the chicken filling in the center.
  2. Moisten the edges with water, fold, and seal tightly. Repeat with the remaining filling and wrappers.
Simmer the Broth
  1. In a large pot, combine chicken broth, soy sauce, Shaoxing wine, sliced ginger, smashed garlic, and scallions. Bring to a boil and let it simmer.
Cook the Wontons
  1. Carefully add the dumplings to the simmering broth and cook until they float and are cooked through, about 5–7 minutes. Season with salt to taste.
Assemble and Serve
  1. Ladle the dumpling broth into bowls, garnish with thinly sliced scallions, fresh cilantro, a few drops of chili oil, and a squeeze of lime for extra freshness.

Notes

These dumplings can chill in the fridge for about 3-4 days. They freeze beautifully, just separate from the broth. To reheat, gently simmer in broth from frozen.
