- In another bowl, whisk together the applesauce, non-dairy milk, flax egg mixture, maple syrup, and vanilla until smooth.
- Combine the wet and dry ingredients; stir gently until just mixed.
- If using, fold in the blueberries and transfer the mixture to the prepared pan.
- Bake for 35-45 minutes or until set; let it cool for five minutes before serving.
