  • 3 cups rolled oats
  • 1/2 cup chopped pecans or walnuts
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsweetened applesauce
  • 1 3/4 cups non-dairy milk
  • 2 pieces flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water) Prepare by mixing ground flaxseed with water and letting it thicken.
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract

  • 1 cup blueberries Optional, for added flavor.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Prepare your flax eggs by mixing ground flaxseed with water and letting it thicken for about 5 minutes.
  3. In a large bowl, combine rolled oats, chopped nuts, cinnamon, nutmeg, baking powder, and salt.
  4. In another bowl, whisk together the applesauce, non-dairy milk, flax egg mixture, maple syrup, and vanilla until smooth.
  5. Combine the wet and dry ingredients; stir gently until just mixed.
  6. If using, fold in the blueberries and transfer the mixture to the prepared pan.
  7. Bake for 35-45 minutes or until set; let it cool for five minutes before serving.

Notes

Serve this baked oatmeal warm, enjoy plain or with toppings like fresh fruit, maple syrup, or plant-based yogurt. Store leftovers in an airtight container in the refrigerator for up to one week. You can reheat in the microwave or oven when ready to enjoy.
