  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
Filling
  • 1 package (8 oz) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 8 oz white chocolate, melted
  • 1 teaspoon vanilla extract
Toppings
  • 2 cups fresh strawberries, sliced
  • Whipped cream for topping

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press this mix into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat softened cream cheese until smooth. Stir in sweetened condensed milk, melted white chocolate, and vanilla extract until well combined.
Baking
  1. Pour the cream cheese mixture over the crust in the springform pan.
  2. Bake for 25-30 minutes until set. Let it cool to room temperature.
  3. Refrigerate for at least 4 hours or overnight.
Serving
  1. Once chilled, top with sliced strawberries and whipped cream. Serve and enjoy!

Let cream cheese soften fully for a smoother filling. Consider using a double boiler to melt your chocolate gently. Don’t skip the cooling time; it ensures the cheesecake sets perfectly. This cheesecake can also be made ahead and gets even better after a day in the fridge.
