Ingredients
  

Vegetables and Base
  • 1 cup mixed greens
  • 0.5 cup sliced cucumbers
  • 0.5 cup shredded carrots
  • 0.5 cup bell peppers, assorted colors
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup avocado, sliced
  • 4 large flour tortillas or whole-grain wraps
  • 0.5 cup hummus or your favorite spread
  • Salt and pepper, to taste
  • Optional: hot sauce or salsa

Method
 

Preparation
  1. Wash and slice all the vegetables into thin strips. Set them aside in a bowl.
  2. Lay each tortilla flat and spread a generous layer of hummus over the entire surface.
  3. Evenly distribute the mixed greens, cucumbers, carrots, bell peppers, onions, and avocado over the tortillas.
  4. Sprinkle with salt, pepper, and any optional sauces you desire.
  5. Start rolling the tortilla tightly from one side, folding in the ends to secure the filling as you go.
  6. Cut the wraps in half and serve immediately, or wrap in foil for a portable lunch.

Notes

These wraps are best enjoyed fresh, but they can stay in the fridge for about 2-3 days when stored in an airtight container. For make-ahead magic, assemble all your ingredients but wait to roll them until just before eating. Experiment with different spreads and vegetables for variety.
