Vegan Vanilla Panna Cotta

Ingredients
  

For the panna cotta
  • 1/4 cup water
  • 1 1/2 teaspoons agar agar powder Key ingredient for setting the panna cotta
  • 4 cups vegan heavy cream Ensure it's at room temperature before mixing
  • 6 tablespoons sugar Adjustable based on personal sweetness preference
  • 1 heaping teaspoon vanilla bean paste or extract Can swap for almond extract if desired
  • a pinch salt
For the berry topping
  • 1 cup berries of choice, fresh or frozen Creative options include any berries you love
  • 1/3 cup water
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1/2 teaspoon vanilla bean paste or extract

Method
 

Preparation
  1. Spray 5 ramekins with cooking spray, then wipe out most of the oil with a paper towel.
  2. In a small bowl, whisk together the agar agar and 1/4 cup water, then set aside.
  3. In a medium saucepan, combine vegan heavy cream and sugar, and heat over medium until boiling.
  4. Once boiling, whisk in the agar agar mixture and continue boiling for 3 minutes, stirring constantly.
  5. Remove from heat and whisk in vanilla and salt.
  6. Pour the mixture evenly into the prepared ramekins and let cool at room temperature for about 30 minutes.
  7. Cover each ramekin with plastic wrap and refrigerate to set for at least 6 hours or overnight.
Serving
  1. Invert the panna cotta onto serving plates or serve directly in ramekins.
  2. Top with the prepared berry topping and enjoy!

Notes

This panna cotta keeps well in the fridge for up to 5 days. Freezing is not recommended as it alters the texture. Adjust the sugar according to personal taste. Infuse with spices for unique flavors.
