  • 1.5 cups all-purpose gluten-free flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
Wet Ingredients
  • 1 cup almond milk (or any plant-based milk)
  • 0.33 cup apple cider vinegar
  • 0.33 cup vegetable oil (or melted coconut oil)
  • 2 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt together.
  3. In another bowl, combine the almond milk and apple cider vinegar, then let it sit for a few minutes.
  4. Stir in the oil and vanilla extract into the milk mixture.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Pour the batter into the prepared cake pan.
Baking
  1. Bake for 25-30 minutes or until a toothpick comes out clean.
  2. Let it cool before serving.

Notes

Use room temperature ingredients for a smoother batter. For a richer cake, swap half the almond milk for coconut cream for a dreamy texture. Add lemon zest for a refreshing citrus twist!
