- Divide the batter into two equal parts and fold in the espresso into one part.
- Pour the vanilla batter into the pan, followed by the espresso batter, and swirl them together gently.
Baking
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Let the cake cool completely.
Frosting
- For the frosting, whip together dairy-free mascarpone and cream cheese until smooth.
- Spread the frosting on top of the cooled cake and dust with cocoa powder.
