Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet Ingredients
  • 1 cup almond milk (or any plant-based milk)
  • 1/4 cup vegetable oil
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract
  • 1/2 cup espresso or strong coffee
Frosting Ingredients
  • 1 cup dairy-free mascarpone cheese
  • 1/2 cup dairy-free cream cheese
  • Cocoa powder for dusting

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together almond milk, vegetable oil, vinegar, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter into two equal parts and fold in the espresso into one part.
  6. Pour the vanilla batter into the pan, followed by the espresso batter, and swirl them together gently.
Baking
  1. Bake for 25-30 minutes, or until a toothpick comes out clean.
  2. Let the cake cool completely.
Frosting
  1. For the frosting, whip together dairy-free mascarpone and cream cheese until smooth.
  2. Spread the frosting on top of the cooled cake and dust with cocoa powder.

Notes

Tips: Letting the cake chill after adding the frosting makes the flavors meld beautifully. For extra flair, add shaved dark chocolate on top or try coffee liqueur for an adult twist.
