Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix the vegan eggs, vegan sausage, tempeh bacon, and mixed vegetables. Season with salt and pepper to taste.
- Grease a baking dish with oil and spread the tater tots in an even layer on the bottom.
- Pour the egg and veggie mixture over the tater tots.
- Bake in the preheated oven for 25-30 minutes, or until the vegan eggs are set and the top is golden.
- Let cool slightly, then slice and serve warm.
Notes
For extra crispiness, cook the tater tots beforehand. You can customize by swapping vegetables or adding nutritional yeast for a cheesy flavor without dairy. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2 months.
