For the Casserole
  • 2 cups Vegan eggs Can be made from a plant-based egg substitute.
  • 1 cup Vegan sausage Crumbled or sliced.
  • 1 cup Tempeh bacon Chopped into bits.
  • 2 cups Mixed vegetables (e.g., bell peppers, onions, spinach) Feel free to use your favorite veggies.
  • 1 bag Tater tots Frozen tater tots work well.

  • 1 tablespoon Oil for greasing the baking dish Use olive oil or any preferred cooking oil.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix the vegan eggs, vegan sausage, tempeh bacon, and mixed vegetables. Season with salt and pepper to taste.
  3. Grease a baking dish with oil and spread the tater tots in an even layer on the bottom.
  4. Pour the egg and veggie mixture over the tater tots.
  5. Bake in the preheated oven for 25-30 minutes, or until the vegan eggs are set and the top is golden.
  6. Let cool slightly, then slice and serve warm.

Notes

For extra crispiness, cook the tater tots beforehand. You can customize by swapping vegetables or adding nutritional yeast for a cheesy flavor without dairy. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2 months.
