- Blend the strawberries in a food processor until smooth.
- In a bowl, mix the coconut cream, maple syrup, vanilla extract, and lemon juice.
- Combine the strawberry puree with the coconut cream mixture and stir until well combined.
- Add chia seeds and mix well.
- Chill in the refrigerator for at least 1 hour until set.
- Serve chilled, garnished with fresh strawberries.
Notes
For a smoother texture, strain the strawberry puree to remove seeds. You can also use frozen strawberries, just let them thaw beforehand. Consider topping with coconut whipped cream or granola when serving.
