  • 1 cup coconut cream
  • 1/4 cup maple syrup Sweetener
  • 1 teaspoon vanilla extract For flavor
  • 1 tablespoon lemon juice
  • 2 tablespoons chia seeds For texture

Preparation
  1. Blend the strawberries in a food processor until smooth.
  2. In a bowl, mix the coconut cream, maple syrup, vanilla extract, and lemon juice.
  3. Combine the strawberry puree with the coconut cream mixture and stir until well combined.
  4. Add chia seeds and mix well.
  5. Chill in the refrigerator for at least 1 hour until set.
  6. Serve chilled, garnished with fresh strawberries.

Notes

For a smoother texture, strain the strawberry puree to remove seeds. You can also use frozen strawberries, just let them thaw beforehand. Consider topping with coconut whipped cream or granola when serving.
