Preparation
- Chop the onion and garlic and place them in a pan with all the filling ingredients (except the tofu).
- Bring to a boil and cook until the spinach and onion have softened.
- Allow to cool, then blend everything together with the tofu until creamy.
Rolling and Baking
- Roll out the puff pastry into a rectangle measuring approximately 25 cm x 35 cm (10" x 14").
- Coat the dough with the filling, roll it up tightly, and cut it into 12 pieces.
- Place them on a baking tray and bake for 20 minutes in a preheated oven at 200 °C (400 °F).
Notes
These rolls are best served hot, with a side of vegan ranch or hummus for dipping. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven or air fryer to enjoy the crispiness.
