Vegan Spinach Rolls

Ingredients
  

Filling Ingredients
  • 1 sheet puff pastry Approximately 250 g
  • 1 medium onion
  • 4 cloves garlic
  • 200 g spinach Approximately 7 oz
  • 1 dl water Approximately 1/2 cup
  • 100 g tofu Approximately 3.5 oz
  • 15 g nutritional yeast Approximately 1/4 cup
  • 1/2 teaspoon salt
  • 1 pinch pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder

Method
 

Preparation
  1. Chop the onion and garlic and place them in a pan with all the filling ingredients (except the tofu).
  2. Bring to a boil and cook until the spinach and onion have softened.
  3. Allow to cool, then blend everything together with the tofu until creamy.
Rolling and Baking
  1. Roll out the puff pastry into a rectangle measuring approximately 25 cm x 35 cm (10" x 14").
  2. Coat the dough with the filling, roll it up tightly, and cut it into 12 pieces.
  3. Place them on a baking tray and bake for 20 minutes in a preheated oven at 200 °C (400 °F).

Notes

These rolls are best served hot, with a side of vegan ranch or hummus for dipping. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven or air fryer to enjoy the crispiness.
