Ingredients
  

Dry Ingredients
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
Mix-ins
  • 1/2 cup vegan chocolate chips
  • 1/2 cup mini vegan marshmallows
  • 1/2 cup crushed graham crackers (gluten-free if needed)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, mix the melted coconut oil, brown sugar, maple syrup, and vanilla extract until well combined.
  4. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
  5. Fold in the chocolate chips, vegan marshmallows, and crushed graham crackers.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet and flatten slightly.
Baking
  1. Bake for 10-12 minutes until the edges are golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Chill the dough for about 30 minutes to help maintain shape while baking. For a gluten-free version, use gluten-free graham crackers.
