Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the almond flour, coconut flour, baking soda, and salt.
- In another bowl, mix the melted coconut oil, brown sugar, maple syrup, and vanilla extract until well combined.
- Gradually mix the dry ingredients into the wet ingredients until a dough forms.
- Fold in the chocolate chips, vegan marshmallows, and crushed graham crackers.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet and flatten slightly.
Baking
- Bake for 10-12 minutes until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Chill the dough for about 30 minutes to help maintain shape while baking. For a gluten-free version, use gluten-free graham crackers.
