Preparation
- Mash up graham crackers and set them aside.
- In a large bowl, whisk together brown sugar, cane sugar, salt, and chilled vegan butter.
- Whisk in plant milk and vanilla extract until a smooth batter forms.
- Sift in flour and baking powder, then carefully fold the mixture with a spatula.
- Fold in chocolate chunks, graham cracker crumbs, and vegan mini marshmallows.
- Chill the dough for 30 minutes.
Baking
- Preheat the oven to 350°F (180°C).
- Scoop the dough onto a parchment-lined baking sheet, leaving at least 2 inches of space between cookies.
- Top the cookies with additional marshmallows, graham cracker crumbs, and chocolate chunks.
- Bake for 15-18 minutes until the edges are golden.
- Let them cool completely on the baking sheet.
Notes
Chill the dough for best texture. Experiment with flavors or different types of chocolate. Do not overbake.
