Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup coconut oil (melted) Can substitute with avocado oil for a more neutral flavor.
  • 1/4 cup brown sugar
For the brownies
  • 1 cup dairy-free chocolate chips
  • 1 cup vegan brownie batter Can use store-bought or homemade.
  • 1 cup mini marshmallows

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted coconut oil, and brown sugar until well combined.
  3. Press this mixture into the bottom of a greased baking dish to create the crust.
  4. Prepare the brownie batter according to recipe or package instructions and pour it over the crust layer.
Baking
  1. Bake the brownies for about 25-30 minutes or until set.
  2. Remove from the oven and immediately sprinkle mini marshmallows on top.
  3. Return to the oven and broil for 1-2 minutes until the marshmallows are toasted.
  4. Let cool, cut into bars, and enjoy your Vegan S'mores Brownies!

Notes

For serving, consider pairing with coconut milk ice cream or coconut whipped cream. Store in the fridge for up to a week or freeze for up to three months. Reheat in the microwave for 15 seconds when ready to serve. For variations, add peanut butter to the batter or use gluten-free graham crackers.
