  • 2 cups Mashed Potatoes Can substitute with mashed sweet potatoes
  • 1 cup Caramelized Onions Essential for flavor
  • 1 cup Vegan Cheese Mozzarella-style or cheddar-style preferred
  • 2 tablespoons Herbs Fresh herbs like thyme or rosemary
For the pastry
  • 1 package Puff Pastry Store-bought or homemade
  • 2 tablespoons Sesame Seeds Optional but recommended

Method
 

Preparation
  1. If using store-bought puff pastry, let it thaw according to package instructions. If making homemade puff pastry, prepare it in advance.
  2. In a bowl, mix the mashed potatoes, caramelized onions, and vegan cheese until well combined. Add herbs for extra flavor.
Assembly
  1. Roll out the puff pastry on a lightly floured surface. Cut into squares or circles, depending on your preference.
  2. Place a spoonful of the potato mixture in the center of each pastry piece.
  3. Fold the pastry over and seal the edges with a fork or by pinching them together.
  4. Brush the tops with a little water and sprinkle sesame seeds if using.
Baking
  1. Preheat your oven to 400°F (200°C).
  2. Place the prepared puffs on a baking sheet lined with parchment paper.
  3. Bake for about 20-25 minutes or until golden brown and flaky.
Serving
  1. Allow the puffs to cool slightly before serving. They are best enjoyed warm.

Notes

Serve your Vegan Potato and Onion Puffs as a snack or appetizer. They pair well with a light salad or a dipping sauce.
