  • 1 cup peanut butter Use creamy peanut butter for best results.
  • 1 cup brown sugar
  • 1 cup all-purpose flour Can substitute with gluten-free flour blend.
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chunks Can swap for nuts if preferred.

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, combine peanut butter, brown sugar, flour, baking powder, salt, and vanilla extract until smooth.
  3. Fold in the chocolate chunks.
  4. Pour the batter into the prepared baking pan and spread it evenly.
Baking
  1. Bake for 25-30 minutes or until the edges are golden brown.
  2. Allow to cool before cutting into bars and serve.

Notes

For added indulgence, drizzle melted chocolate over the blondies before serving. Pair with vegan vanilla ice cream for a delightful treat. Store leftovers in an airtight container in the fridge for up to a week or freeze for up to three months.
