Preparation
- Make the Flax Egg: In a small bowl, mix 2 tablespoons of ground flaxseed with 2 tablespoons of water. Let it sit until it gels up.
- Prepare the Patty Mixture: In a large bowl, mash chickpeas, then mix in oats, red onion, garlic, flax egg, nutritional yeast, soy sauce, smoked paprika, cumin, salt, and pepper.
- Caramelize the Onions: Heat 1 tablespoon of olive oil in a skillet, add the yellow onions, and sprinkle with balsamic vinegar and salt. Sauté until golden and soft (about 15-20 minutes on low heat).
Cooking
- Cook the Patties: Form the chickpea mixture into patties and fry them in a pan with olive oil until browned (around 4 minutes on each side).
- Assemble the Patty Melts: Spread Dijon mustard on each slice of bread, place a patty, caramelized onions, and vegan cheese between two slices.
- Grill the Sandwiches: Heat a non-stick skillet and grill each sandwich with vegan butter until golden brown and the cheese melts (about 4 minutes on each side).
