Ingredients
  

Patty Mixture
  • 1.5 cups cooked chickpeas or 1 can, drained and rinsed
  • 0.5 cups rolled oats
  • 0.25 cups finely chopped red onion
  • 2 cloves garlic (minced)
  • 2 tablespoons ground flaxseed
  • 2 tablespoons water for making flax egg
  • 2 tablespoons nutritional yeast
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cumin
  • Salt and pepper to taste
Caramelized Onions
  • 1 tablespoon olive oil (for sautéing onions)
  • 2 large yellow onions (thinly sliced)
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • a pinch salt
Assembly and Grilling
  • 8 slices sourdough or rye bread
  • 8 slices vegan cheese (cheddar-style recommended)
  • 2 tablespoons Dijon mustard
  • Vegan butter or oil for grilling

Method
 

Preparation
  1. Make the Flax Egg: In a small bowl, mix 2 tablespoons of ground flaxseed with 2 tablespoons of water. Let it sit until it gels up.
  2. Prepare the Patty Mixture: In a large bowl, mash chickpeas, then mix in oats, red onion, garlic, flax egg, nutritional yeast, soy sauce, smoked paprika, cumin, salt, and pepper.
  3. Caramelize the Onions: Heat 1 tablespoon of olive oil in a skillet, add the yellow onions, and sprinkle with balsamic vinegar and salt. Sauté until golden and soft (about 15-20 minutes on low heat).
Cooking
  1. Cook the Patties: Form the chickpea mixture into patties and fry them in a pan with olive oil until browned (around 4 minutes on each side).
  2. Assemble the Patty Melts: Spread Dijon mustard on each slice of bread, place a patty, caramelized onions, and vegan cheese between two slices.
  3. Grill the Sandwiches: Heat a non-stick skillet and grill each sandwich with vegan butter until golden brown and the cheese melts (about 4 minutes on each side).

Notes

Serve alongside crispy sweet potato fries or a zesty garden salad. Optional: Add extra veggies like spinach or bell peppers. For added heat, consider a dash of hot sauce!
