Ingredients
  

Oatmeal Cookies
  • 1 cup vegan butter, softened
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 each flax egg (1 tbsp ground flaxseed + 3 tbsp water) Can replace with applesauce or chia seeds mixed with water.
  • 1 tbsp molasses
  • 2 tsp vanilla extract
  • 3 cups quick oats
  • 1 1/2 cups all-purpose flour (or gluten-free baking flour) Use Bob's Red Mill for gluten-free.
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
Vanilla Buttercream Frosting
  • 1/2 cup vegan butter, softened
  • 2-6 tbsp non-dairy milk
  • 1 tsp vanilla extract For frosting
  • a pinch salt
  • 2-3 cups powdered sugar, sifted

Method
 

Oatmeal Cookies
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened vegan butter, light brown sugar, and granulated sugar until fluffy.
  3. Stir in the flax egg, molasses, and vanilla extract.
  4. In a separate bowl, mix the quick oats, flour, baking soda, cinnamon, baking powder, salt, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, combining well.
  6. Scoop spoonfuls of the dough onto a baking sheet lined with parchment.
  7. Bake for 10-12 minutes or until just lightly golden. Let cool.
Vanilla Buttercream Frosting
  1. In a bowl, beat the softened vegan butter until creamy.
  2. Gradually add the powdered sugar, then pour in non-dairy milk, vanilla extract, and a pinch of salt.
  3. Mix until the frosting is smooth and fluffy.
Assemble
  1. Spread frosting between two oatmeal cookies to create delightful sandwiches.

Notes

Let the cookies cool completely before frosting them to avoid a melted mess. Can be served with vegan ice cream for extra indulgence.
