Ingredients
  

Burger Mixture
  • 2 cups mushrooms, finely chopped
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
Toppings
  • Caramelized red onions For topping
  • Mango chutney For that sweet zing
  • Fresh arugula Because greens!

Method
 

Preparation
  1. In a skillet, heat olive oil and sauté the onions and garlic until soft.
  2. Add the finely chopped mushrooms and cook until they release their moisture and become golden brown.
  3. In a mixing bowl, combine the cooked quinoa, mushroom mixture, breadcrumbs, soy sauce, smoked paprika, salt, and pepper. Mix well until everything is combined.
  4. Form the mixture into patties.
Cooking
  1. Cook the patties in a skillet over medium heat for about 5 minutes on each side until they are firm and golden.
Assembly
  1. Assemble the burgers by placing the patties on pretzel buns and topping with caramelized onions, mango chutney, and arugula.

Notes

Store leftovers in the fridge for up to 3-4 days. For longer storage, freeze for up to a month.
