Preparation
- In a skillet, heat olive oil and sauté the onions and garlic until soft.
- Add the finely chopped mushrooms and cook until they release their moisture and become golden brown.
- In a mixing bowl, combine the cooked quinoa, mushroom mixture, breadcrumbs, soy sauce, smoked paprika, salt, and pepper. Mix well until everything is combined.
- Form the mixture into patties.
Cooking
- Cook the patties in a skillet over medium heat for about 5 minutes on each side until they are firm and golden.
Assembly
- Assemble the burgers by placing the patties on pretzel buns and topping with caramelized onions, mango chutney, and arugula.
Notes
Store leftovers in the fridge for up to 3-4 days. For longer storage, freeze for up to a month.
