Ingredients
  

Burger Ingredients
  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs Can substitute with gluten-free oats
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 tsp cumin
  • 1 tsp Moroccan seasoning
  • Salt and pepper to taste
  • 1 medium avocado For topping
  • 1 tbsp olive oil For topping
  • 1 tbsp lemon juice For topping
  • 4 pieces sesame buns
  • Optional toppings: lettuce, tomato, cucumber

Method
 

Preparation
  1. In a large bowl, mash the cooked lentils with a fork.
  2. Add breadcrumbs, chopped onion, minced garlic, cumin, Moroccan seasoning, salt, and pepper. Mix well.
  3. Form the mixture into patties.
Cooking
  1. Heat a skillet over medium heat with a little oil and cook the patties for 5-7 minutes on each side until golden brown.
Topping
  1. For the avocado topping, mash the avocado with olive oil and lemon juice.
Assembly
  1. Toast the sesame buns, then assemble the burger with the lentil patty, herb smashed avocado, and any additional toppings you desire. Serve immediately.

Notes

Store leftovers in an airtight container for about 3-4 days in the fridge. They can also be frozen for up to 3 months. Reheat in a skillet or microwave.
