Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix the olive oil, lemon juice, lemon zest, black pepper, and salt.
- Add the cauliflower florets to the bowl and toss them until they are well coated.
Cooking
- Spread the cauliflower evenly on a baking sheet lined with parchment paper.
- Roast in the oven for 20-25 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
- Remove from the oven and let cool slightly.
- Garnish with fresh parsley if desired and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving. For extra crunch, you can broil the cauliflower for the last 2-3 minutes of cooking.
