Preparation
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the applesauce, vegetable oil, almond milk, lemon juice, lemon zest, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Vegan Lemon Bread can be enjoyed plain, spread with vegan butter or fruit jam, or with a dusting of powdered sugar. Store in an airtight container for up to 3 days or refrigerate for a week. Can be frozen for up to 3 months. Avoid overmixing the batter for a tender loaf. Consider adding poppy seeds or walnuts for added texture.
