Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour Make sure to measure accurately for the best texture.
  • 1 cup sugar Increase by 1/4 cup for a sweeter bread.
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsweetened applesauce Can substitute with mashed bananas or egg replacer.
  • 1/4 cup vegetable oil
  • 1/2 cup almond milk or other non-dairy milk
  • 1/4 cup fresh lemon juice Use fresh lemons for best flavor.
  • 1 tbsp lemon zest Use fresh lemons for zest.
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the applesauce, vegetable oil, almond milk, lemon juice, lemon zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Vegan Lemon Bread can be enjoyed plain, spread with vegan butter or fruit jam, or with a dusting of powdered sugar. Store in an airtight container for up to 3 days or refrigerate for a week. Can be frozen for up to 3 months. Avoid overmixing the batter for a tender loaf. Consider adding poppy seeds or walnuts for added texture.
