Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup vegan butter melted
For the lemon filling
  • 1 cup lemon juice
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon turmeric for color
  • 1/2 teaspoon baking powder

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and melted vegan butter until crumbly to form the crust.
  3. Press the mixture into a greased square baking pan and bake for 15 minutes.
  4. In another bowl, whisk together lemon juice, granulated sugar, cornstarch, turmeric, and baking powder until smooth.
  5. Pour the lemon mixture over the baked crust.
  6. Bake for an additional 25-30 minutes, until set.
  7. Let cool before cutting into squares and enjoy!

Notes

Serve with a dusting of powdered sugar and a scoop of vegan ice cream. These bars can be stored in the fridge for 5-7 days or in the freezer for up to a month.
