- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, powdered sugar, and melted vegan butter until crumbly to form the crust.
- Press the mixture into a greased square baking pan and bake for 15 minutes.
- In another bowl, whisk together lemon juice, granulated sugar, cornstarch, turmeric, and baking powder until smooth.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 25-30 minutes, until set.
- Let cool before cutting into squares and enjoy!
Notes
Serve with a dusting of powdered sugar and a scoop of vegan ice cream. These bars can be stored in the fridge for 5-7 days or in the freezer for up to a month.
