  • 1 can young green jackfruit in brine
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 cup BBQ sauce
  • to taste Salt and pepper
  • to serve Vegan ranch dressing
  • for garnish Fresh parsley

Method
 

Preparation
  1. Drain and rinse the jackfruit. Remove the core and seeds, then shred the jackfruit into wing-sized pieces.
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, and sauté until translucent.
  3. Add shredded jackfruit, smoked paprika, cumin, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally.
  4. Pour in BBQ sauce and mix well. Let it simmer for another 10 minutes until heated through.
  5. Preheat the oven to 400°F (200°C). Spread the jackfruit mixture on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, until crispy.
Serving
  1. Serve warm with vegan ranch dressing and garnish with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
