- Preheat the oven to 400°F (200°C).
- In a bowl, combine sliced strawberries, sugar, vanilla extract, cornstarch, and lemon juice.
- Roll out the puff pastry on a floured surface and cut into squares.
- Place a spoonful of the strawberry mixture in the center of each square.
- Fold the corners of the pastry over the filling to form a danish shape.
- Place on a baking sheet lined with parchment paper.
- Brush the tops with non-dairy milk.
- Bake for 15-20 minutes or until golden brown.
- Let cool before serving.

Serve these danishes on a vibrant platter, optionally drizzle with vegan icing or dust with powdered sugar. They can last up to 3 days in the fridge or be frozen for up to a month.
