Ingredients
  

Danish Filling
  • 1 cup fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
Pastry
  • 1 package vegan puff pastry
  • Non-dairy milk for brushing

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine sliced strawberries, sugar, vanilla extract, cornstarch, and lemon juice.
  3. Roll out the puff pastry on a floured surface and cut into squares.
  4. Place a spoonful of the strawberry mixture in the center of each square.
  5. Fold the corners of the pastry over the filling to form a danish shape.
  6. Place on a baking sheet lined with parchment paper.
  7. Brush the tops with non-dairy milk.
  8. Bake for 15-20 minutes or until golden brown.
  9. Let cool before serving.

Notes

Serve these danishes on a vibrant platter, optionally drizzle with vegan icing or dust with powdered sugar. They can last up to 3 days in the fridge or be frozen for up to a month.
