  • 2 cups almond milk (or any plant-based milk) Use any plant-based milk of your choice.
  • 1/4 cup cornstarch
  • 1/4 cup maple syrup (or sweetener of choice) Agave syrup can be used as an alternative.
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. In a medium saucepan, whisk together the almond milk, cornstarch, maple syrup, vanilla extract, and salt.
  2. Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil.
  3. Once thickened, remove from heat and let it cool.
  4. Serve chilled or warm as a delicious vegan dessert.

Notes

For serving ideas, top with fresh fruits like berries or bananas, add a sprinkle of cinnamon or nutmeg, or pair with cookies or granola. Store in the fridge for 3-4 days in a sealed container. Reheat slowly over low heat or enjoy chilled. Don't rush the cooling for the best texture.
