Ingredients
  

For the Crème Brûlée
  • 1 can full-fat coconut milk 13.5 oz
  • 1/2 cup plant-based milk of your choice
  • 3 tbsp tapioca starch (20g)
  • 1/4 cup granulated sugar (50g)
  • 3/4 teaspoon agar-agar powder
  • 1 pinch sea salt
  • 2 teaspoons vanilla extract
  • 1 teaspoon sugar per ramekin for caramelized top

Method
 

Preparation
  1. Combine all ingredients in a blender and blend until smooth.
  2. Transfer the mixture to a medium-sized saucepan over medium-low heat.
  3. Whisk frequently for about 10 minutes until thickened with small bubbles appearing at the sides.
  4. Pour the thickened mixture into ramekins and let cool at room temperature for about an hour.
  5. Wrap each ramekin tightly in plastic wrap and refrigerate for a few hours to firm up.
Caramelizing
  1. When ready to serve, sprinkle sugar evenly over the top of each ramekin.
  2. Use a blow torch to caramelize the sugar. If no torch is available, broil ramekins in the oven for about a minute until golden brown.

Notes

Serve with a fresh fruit medley for a pop of color and complementary sweetness. Store leftovers in the fridge for up to three days, avoiding caramelizing sugar until ready to serve.
