Preparation
- Combine all ingredients in a blender and blend until smooth.
- Transfer the mixture to a medium-sized saucepan over medium-low heat.
- Whisk frequently for about 10 minutes until thickened with small bubbles appearing at the sides.
- Pour the thickened mixture into ramekins and let cool at room temperature for about an hour.
- Wrap each ramekin tightly in plastic wrap and refrigerate for a few hours to firm up.
Caramelizing
- When ready to serve, sprinkle sugar evenly over the top of each ramekin.
- Use a blow torch to caramelize the sugar. If no torch is available, broil ramekins in the oven for about a minute until golden brown.
Notes
Serve with a fresh fruit medley for a pop of color and complementary sweetness. Store leftovers in the fridge for up to three days, avoiding caramelizing sugar until ready to serve.
