Main Ingredients
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup almond milk (or any plant-based milk)
  • 0.25 cup vegetable oil
  • 0.25 cup maple syrup
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
Crumble Topping
  • 0.5 cup oats
  • 0.5 cup brown sugar
  • 0.25 cup flour
  • 1 teaspoon cinnamon
  • 0.25 cup coconut oil (melted)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the almond milk, vegetable oil, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a separate bowl, mix the crumble topping ingredients until crumbly.
Baking
  1. Pour the cake batter into the prepared pan and swirl in the crumble topping.
  2. Bake for 30-35 minutes, or until a toothpick comes out clean.
Serving
  1. Allow to cool slightly before serving with coffee or tea.

Notes

Store the cake in an airtight container in the fridge for 4-5 days or freeze it for up to a month. Reheat in the microwave before serving.
