Dough Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup almond milk (or other non-dairy milk)
  • 1/4 cup coconut oil (melted)
  • 2 teaspoons vanilla extract
Filling Ingredients
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar
Icing Ingredients
  • 1/2 cup dairy-free cream cheese
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. In a bowl, mix the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the almond milk, melted coconut oil, and vanilla extract.
  3. Combine the wet and dry ingredients to form a dough.
  4. Roll out the dough and sprinkle with cinnamon and brown sugar.
  5. Roll into a log and slice into rolls.
  6. Place in a greased pan and let rise overnight in the fridge or for 30 minutes at room temperature.
Baking
  1. Bake at 350°F (175°C) for 20-25 minutes or until golden.
Making the Icing
  1. To make the icing, mix the dairy-free cream cheese, powdered sugar, and lemon juice until smooth.
  2. Drizzle over the warm cinnamon rolls before serving.

Notes

For a sweeter roll, add a touch more sugar. Letting the rolls rise overnight enhances their flavor.
