  • 3.5 ripe bananas medium to large
  • 1/2 cup maple syrup OR brown sugar; only naturally sweetened when using maple syrup
  • 3 tablespoons avocado oil OR use canola oil/melted coconut oil
  • 1.5 teaspoons vanilla extract
Dry Ingredients
  • 1.5 cups whole wheat pastry flour OR all-purpose flour
  • 1.5 teaspoons baking soda
  • 1/4 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg optional
Mix-ins
  • 1/2 cup walnuts OR pecans
  • 1/4 cup vegan chocolate chips semi-sweet preferred

Method
 

Preparation
  1. Preheat your oven to 350°F and lightly grease a 9x5 loaf pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Add maple syrup (or brown sugar), oil, and vanilla extract. Stir until everything is combined.
  4. Sift in the flour, baking soda, salt, and cinnamon (add nutmeg if you’re feeling spicy). Stir until just combined; don’t over-mix or your bread may be a little dry.
  5. Fold in the walnuts and chocolate chips with a gentle touch.
Baking
  1. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  2. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
