Preparation
- Preheat your oven to 350°F and lightly grease a 9x5 loaf pan.
- In a large bowl, mash the bananas until smooth.
- Add maple syrup (or brown sugar), oil, and vanilla extract. Stir until everything is combined.
- Sift in the flour, baking soda, salt, and cinnamon (add nutmeg if you’re feeling spicy). Stir until just combined; don’t over-mix or your bread may be a little dry.
- Fold in the walnuts and chocolate chips with a gentle touch.
Baking
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
Enjoy your banana bread warm, plain, or indulge with a spread of vegan butter or peanut butter. This bread keeps well! Store it in an airtight container at room temperature for up to 3 days. Freeze individual slices for up to 2 months.
