  • 1 cup chickpeas, mashed
  • 1 ripe avocado mashed
  • 2 tablespoons pickles, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
For Assembly
  • Bread of choice Consider toasted whole-grain for added crunch.

Preparation
  1. In a bowl, combine the mashed chickpeas and avocado.
  2. Stir in the chopped pickles, dill, lemon juice, and minced garlic.
  3. Season with salt and pepper to taste.
Assembly
  1. Spread the mixture onto slices of bread.

Notes

Make sure you mash the avocado and chickpeas well enough. For added spice, consider a pinch of cayenne pepper or adding vegan pepper jack cheese. The sandwich is best enjoyed fresh, but leftovers can be stored in the fridge for 1-2 days in an airtight container.
