Ingredients
  

Cheesecake Layer
  • 16 ounces vegan cream cheese (room temperature)
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
Brownie Layer
  • 1/2 cup melted vegan butter (hot)
  • 1 1/4 cup granulated sugar
  • 1/3 cup non-dairy milk (plain, unsweetened)
  • 3 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 2/3 cup cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Line an 8x8 pan with parchment paper and/or spray with cooking oil.
  3. For the Cheesecake Layer: Mix vegan cream cheese, sugar, cornstarch, lemon juice, 2 teaspoons of vanilla, and salt until creamy. Set aside.
  4. For the Brownie Layer: In a large bowl, mix melted vegan butter, granulated sugar, non-dairy milk, and 3 teaspoons of vanilla. Whisk until combined.
  5. Add flour, cocoa powder, baking powder, and salt to the brownie mix. Stir until just combined.
  6. Pour half of the brownie batter into the prepared pan, followed by the cheesecake layer, and top with the remaining brownie batter.
  7. Use a knife to swirl the layers for that gorgeous marbled effect.
  8. Bake for 30-35 minutes or until a toothpick comes out mostly clean.
  9. Let it cool before slicing into squares.

Notes

Dust with powdered sugar or serve with vegan ice cream and fresh berries for added flavor.
