- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the vegan butter and sugar until light and fluffy.
- Add the brewed chamomile tea and vanilla extract, mixing well.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Scoop tablespoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on a rack before serving.
Notes
Chill the dough for even softer cookies. Consider adding lemon or orange zest for a fresh twist, or toss in some vegan chocolate chips for extra flavor.
