Ingredients
  

For the Cannoli Shells
  • 1 cup all-purpose flour Substitute with gluten-free flour for a gluten-free version.
  • 2 tablespoons cocoa powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 tablespoons coconut oil Melted
  • 1/4 cup water Gradually added to form the dough.
For the Ricotta Filling
  • 1 cup vegan ricotta
  • 1/2 cup powdered sugar
  • 1/4 cup chocolate chips
  • 1 teaspoon vanilla extract

Method
 

Dough Preparation
  1. In a mixing bowl, combine flour, cocoa powder, sugar, and salt.
  2. Add in the coconut oil and mix until crumbly.
  3. Gradually add water until a dough forms.
  4. Knead until smooth and let it rest for 30 minutes.
Frying the Shells
  1. Roll out the dough thinly and cut into circles.
  2. Wrap the circles around cannoli forms.
  3. Deep fry the shells until golden and crispy.
  4. Remove and let them cool.
Filling and Serving
  1. In another bowl, mix vegan ricotta, powdered sugar, chocolate chips, and vanilla extract until creamy.
  2. Once the shells are cool, fill them with the ricotta mixture.
  3. Serve immediately.

Notes

Best served fresh; if leftovers exist, store shells and filling separately for up to 3 days in the fridge. For added elegance, serve with a dusting of powdered sugar and fresh berries.
