Dough Preparation
- In a mixing bowl, combine flour, cocoa powder, sugar, and salt.
- Add in the coconut oil and mix until crumbly.
- Gradually add water until a dough forms.
- Knead until smooth and let it rest for 30 minutes.
Frying the Shells
- Roll out the dough thinly and cut into circles.
- Wrap the circles around cannoli forms.
- Deep fry the shells until golden and crispy.
- Remove and let them cool.
Filling and Serving
- In another bowl, mix vegan ricotta, powdered sugar, chocolate chips, and vanilla extract until creamy.
- Once the shells are cool, fill them with the ricotta mixture.
- Serve immediately.
Notes
Best served fresh; if leftovers exist, store shells and filling separately for up to 3 days in the fridge. For added elegance, serve with a dusting of powdered sugar and fresh berries.
