Ingredients
  

For the filling
  • 1 can 15 oz can black beans, rinsed and drained
  • 1 large ripe avocado, mashed
  • 0.5 cup frozen or canned corn, thawed or drained
  • 0.25 cup finely chopped red onion
  • 0.25 cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice
  • 0.5 teaspoon cumin powder
  • 0.25 teaspoon chili powder adjust to taste
  • Salt and black pepper, to taste
  • 4 large 10-inch flour tortillas whole wheat or gluten-free if needed

Method
 

Preparation
  1. In a bowl, mash the avocado until smooth.
  2. Add in the black beans, corn, red onion, cilantro, lime juice, cumin, and chili powder.
  3. Season with salt and pepper to taste. Mix everything together until well combined.
  4. Spoon the filling evenly onto each tortilla.
  5. Fold the sides in, then roll up tightly into burritos.
  6. Serve immediately or wrap and refrigerate for a grab-and-go meal.

Notes

These burritos can be kept fresh in the fridge for about 3-4 days. For longer storage, wrap tightly and freeze. Reheat in the microwave or on a skillet before serving.
