  • 1 ripe ripe avocado mashed with lime juice
  • 1 can (15 oz) black beans rinsed and drained
  • 1 cup corn canned or frozen, thawed
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro fresh, chopped
  • 1 tsp cumin ground
  • 1 tsp chili powder ground
  • to taste salt
  • to taste black pepper
  • 4 tortillas whole wheat or flour

Method
 

Preparation
  1. In a medium bowl, mash the ripe avocado until smooth, mixing in zesty lime juice for brightness.
  2. Gently fold in the rinsed black beans, sweet corn, finely chopped red onion, and fresh cilantro.
  3. Sprinkle in cumin, chili powder, salt, and black pepper, then stir gently.
  4. Sample your filling and adjust it with extra lime juice or spices if needed.
Assembly
  1. Heat the tortillas in a skillet or microwave until pliable.
  2. Place one-quarter of the filling into the center of each tortilla, leaving a little room at the edges.
  3. Fold the short sides in first, then tightly roll from the bottom up to seal.
  4. Enjoy your wraps immediately, either whole or sliced in half!

Notes

Store these wraps in the fridge for up to 3 days or freeze them for about a month. Thaw overnight in the fridge and reheat in a skillet for the best taste.
