- Gently fold in the rinsed black beans, sweet corn, finely chopped red onion, and fresh cilantro.
- Sprinkle in cumin, chili powder, salt, and black pepper, then stir gently.
- Sample your filling and adjust it with extra lime juice or spices if needed.
Assembly
- Heat the tortillas in a skillet or microwave until pliable.
- Place one-quarter of the filling into the center of each tortilla, leaving a little room at the edges.
- Fold the short sides in first, then tightly roll from the bottom up to seal.
- Enjoy your wraps immediately, either whole or sliced in half!
Notes
Store these wraps in the fridge for up to 3 days or freeze them for about a month. Thaw overnight in the fridge and reheat in a skillet for the best taste.
