  • 1 ripe ripe avocado (mashed with lime juice for creamy texture)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup corn (canned or frozen, thawed)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup cilantro (fresh, chopped)
  • 1 tsp cumin (ground)
  • 1 tsp chili powder (ground)
  • to taste salt
  • to taste black pepper
Tortillas
  • 4 pieces tortillas (whole wheat or flour)

Method
 

Preparation
  1. In a medium bowl, mash the ripe avocado until smooth, adding zesty lime juice for brightness.
  2. Gently fold in the rinsed black beans, sweet corn, finely chopped red onion, and fresh cilantro.
  3. Sprinkle in cumin, chili powder, salt, and black pepper, then stir gently.
  4. Sample your filling and adjust with extra lime juice or spices if needed.
  5. Heat the tortillas in a skillet or microwave until pliable.
  6. Place one-quarter of the filling into the center of each tortilla, leaving a little room at the edges.
  7. Fold the short sides in first, then tightly roll from the bottom up to seal.
  8. Enjoy your wraps immediately, either whole or sliced in half.

Notes

Ripen your avocado ahead of time for perfect mashing! Store leftovers in an airtight container for 2-3 days. For make-ahead magic, prepare the filling and store it for up to 4 days.
