Method
Cooking the Rice
- Follow package instructions for the rice. Once done, fluff with a fork and mix in the chopped cilantro, lime juice, and a pinch of salt.
Sautéing the Veggies
- In a skillet, heat some oil over medium heat. Sauté the diced onion until it turns translucent.
- Add in the black beans and corn, seasoning with chili powder, garlic powder, and cumin. Let it cook until heated through.
Making Guacamole
- Mash the avocado in a bowl with lime juice and your preferred seasonings.
Assembling the Bowl
- Start with the cilantro lime rice, then layer on the spicy black beans, a generous scoop of guacamole, some crunchy romaine lettuce, and finish off with fresh pico de gallo.
- Drizzle with salsa if you want to kick it up a notch!
Notes
Store components separately to maintain freshness. Reheat rice and beans when ready to serve. Optional: Add roasted veggies or jalapeños for extra flavor.
