Ingredients
  

Main Ingredients
  • 1 cup uncooked long-grain rice
  • 1 can black beans drained and rinsed
  • 1 large ripe avocado for guacamole
  • 1 cup fresh pico de gallo
  • 1/2 cup cilantro chopped
  • 2 tablespoons lime juice for rice and guacamole
Spices
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin

Method
 

Cooking the Rice
  1. Follow package instructions for the rice. Once done, fluff with a fork and mix in the chopped cilantro, lime juice, and a pinch of salt.
Sautéing the Veggies
  1. In a skillet, heat some oil over medium heat. Sauté the diced onion until it turns translucent.
  2. Add in the black beans and corn, seasoning with chili powder, garlic powder, and cumin. Let it cook until heated through.
Making Guacamole
  1. Mash the avocado in a bowl with lime juice and your preferred seasonings.
Assembling the Bowl
  1. Start with the cilantro lime rice, then layer on the spicy black beans, a generous scoop of guacamole, some crunchy romaine lettuce, and finish off with fresh pico de gallo.
  2. Drizzle with salsa if you want to kick it up a notch!

Notes

Store components separately to maintain freshness. Reheat rice and beans when ready to serve. Optional: Add roasted veggies or jalapeños for extra flavor.
