  • 3 medium Medium Potatoes Diced
  • 1 Yellow Onion Chopped
  • 1 Bell Pepper Chopped
  • 1 Zucchini Chopped
  • 8 oz Mushrooms Sliced
Spices
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Smoked Paprika
  • Salt and Pepper to taste
Cooking Oil
  • 2-3 Tbsp Cooking Oil Optional

Preparation
  1. In a large pan over medium heat, add oil and diced potatoes. Stir them together and let them cook for about 10 minutes until they begin to crisp and feel softer when poked with a fork.
  2. Chop the remaining ingredients into bite-sized pieces and toss them into the pan with the spices. Stir well and continue cooking for 5-10 minutes, until the veggies are soft.
  3. Serve with your choice of toppings and enjoy!

Notes

Use leftover potatoes to save time. Mix up the spices for variety. Get creative with toppings like avocado, salsa, or vegan yogurt. Cook in batches to keep everything crispy.
