Ingredients
  

For the crumble mixture
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
For the filling
  • 2 cups mixed berries (fresh or frozen)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. In a mixing bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt to make the crumble mixture.
  3. Press half of the crumble mixture into the bottom of the prepared pan.
  4. Spread the mixed berries over the crumble layer.
  5. Top with the remaining crumble mixture and press down lightly.
  6. Bake for 25-30 minutes, or until the top is golden brown.
  7. Allow to cool before cutting into bars and serving.

Notes

Serve with vegan yogurt or dairy-free ice cream for added indulgence. Store leftovers in the fridge for up to 5 days, or freeze for up to 3 months, warming them up before serving.
