Preparation
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
- In a mixing bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt to make the crumble mixture.
- Press half of the crumble mixture into the bottom of the prepared pan.
- Spread the mixed berries over the crumble layer.
- Top with the remaining crumble mixture and press down lightly.
- Bake for 25-30 minutes, or until the top is golden brown.
- Allow to cool before cutting into bars and serving.
Notes
Serve with vegan yogurt or dairy-free ice cream for added indulgence. Store leftovers in the fridge for up to 5 days, or freeze for up to 3 months, warming them up before serving.
