Burger Mixture
  • 1 cup cooked beets, pureed
  • 1 cup cooked quinoa
  • 1 cup chickpeas, mashed
  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste

  • 1 avocado, sliced
  • Fresh vegetables (like lettuce, tomatoes, and cucumbers)

Method
 

Preparation
  1. In a large bowl, combine the pureed beets, cooked quinoa, mashed chickpeas, breadcrumbs, nutritional yeast, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Shape the mixture into burger patties, about 1 inch thick.
Cooking
  1. Heat a pan over medium heat, add a splash of oil, and cook the patties for about 5-7 minutes on each side, or until they’re golden and crispy.
Assembly
  1. Layer the cooked patties with slices of avocado and fresh vegetables.

Notes

For best texture, keep patties about 1 inch thick. Customize spices and toppings for variation. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
