Main ingredients
  • 4 pieces ripe bananas Use overripe for best sweetness
  • 1/3 cup melted coconut oil Provides moisture and texture
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup sugar
  • 1 1/2 cups all-purpose flour Can substitute with whole wheat for a nutty flavor
  • 1/2 cup chocolate chips or nuts Optional for added texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted coconut oil.
  4. Mix in the vanilla extract, baking soda, and a pinch of salt.
  5. Add the sugar and mix until well combined.
  6. Gradually add the flour and mix until just incorporated.
  7. If desired, fold in chocolate chips or nuts.
  8. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For serving, enjoy plain or with a sprinkle of cinnamon and maple syrup. Store in an airtight container at room temperature for a few days, or freeze for up to three months.
