Ingredients
  

Wet ingredients
  • 1 cup applesauce Unsweetened preferred
  • 1 cup sugar Adjust to taste if sweeter cake is desired
  • 1/2 cup vegetable oil Can substitute with melted coconut oil
  • 1 teaspoon vanilla extract
Dry ingredients
  • 2 cups flour Can substitute with gluten-free flour blend
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon Feel free to add more for extra warmth
  • 1/2 teaspoon nutmeg Feel free to add more for extra warmth
  • 1/4 teaspoon salt
Mix-ins
  • 1 cup chopped nuts or raisins Optional; can also add chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, combine the applesauce, sugar, vegetable oil, and vanilla extract. Mix until well combined.
  3. In another bowl, sift together the flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in nuts or raisins.
  5. Pour the batter into the prepared baking pan and spread it evenly.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool before serving.

Notes

Dust with powdered sugar, serve with vegan ice cream or coconut whipped cream. Store in an airtight container for up to a week, or freeze for up to 3 months.
