Preparation
- Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, combine the applesauce, sugar, vegetable oil, and vanilla extract. Mix until well combined.
- In another bowl, sift together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in nuts or raisins.
- Pour the batter into the prepared baking pan and spread it evenly.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before serving.
Notes
Dust with powdered sugar, serve with vegan ice cream or coconut whipped cream. Store in an airtight container for up to a week, or freeze for up to 3 months.
