Method
 

Preparation
  1. In a bowl, combine warm milk, sugar, and yeast. Let it sit until frothy, about 5 minutes.
  2. In another bowl, whisk together flour and salt.
  3. Add the yeast mixture, eggs, vanilla, and melted butter to the flour. Mix until a dough forms.
  4. Knead the dough on a floured surface until smooth, about 5-7 minutes.
  5. Place the dough in a greased bowl, cover, and let it rise until doubled, about 1 hour.
Cooking
  1. Roll out the dough to about 1/4 inch thick and cut into squares.
  2. Heat oil in a deep fryer or large pot to 350°F (175°C).
  3. Fry beignets until golden brown, about 2-3 minutes per side.
  4. Remove and drain on paper towels.
  5. Dust with powdered sugar before serving.

Notes

Store leftover beignets in an airtight container at room temperature for 1-2 days or freeze for up to 3 months. Reheat in the oven to restore texture.
