  • 2 pieces ripe mangoes, pureed Choose ripe, soft mangoes for the sweetest flavor.
  • 1 cup coconut milk
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 tsp vanilla extract
Dry Ingredients
  • 2 cups flour Sift for a lighter cake texture.
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup desiccated coconut Consider topping with extra for presentation.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together the pureed mangoes, coconut milk, vegetable oil, sugar, and vanilla extract.
  3. In another bowl, combine the flour, baking soda, salt, and desiccated coconut.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until a toothpick comes out clean.
  2. Allow to cool before serving.

Notes

For serving, consider topping with extra desiccated coconut, slices of fresh mango, or a dollop of coconut cream. Store covered at room temperature for about 3-4 days.
