  • 2 cups cooked chicken, shredded You can use leftover or rotisserie chicken.
  • 4 large tortillas or wraps
  • 1 cup shredded cabbage
  • 1 cup carrots, julienned Freshly julienned or pre-shredded.
  • 1 medium bell pepper, sliced Any color bell pepper works.
  • 1/4 cup fresh cilantro, chopped Optional for garnish.
  • 1/4 cup peanut sauce or Thai dressing Use your favorite brand or homemade.
  • to taste Salt and pepper

Method
 

Preparation
  1. In a bowl, combine the shredded chicken, cabbage, carrots, bell pepper, and cilantro.
  2. Add the peanut sauce or Thai dressing and mix well.
  3. Season with salt and pepper to taste.
  4. Lay a tortilla on a flat surface, add a generous amount of the chicken slaw mixture, and wrap tightly.
  5. Repeat with the remaining tortillas.
  6. Cut in half and serve.

Notes

Keep your wraps from getting soggy by adding the dressing just before serving. For extra crunch, add fresh sprouts or shredded carrots right before serving.
