Ingredients
  

For the Meat Filling
  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 Tbsp homemade blend)
  • 2/3 cup water
For Assembly
  • 8 small (6-inch) flour tortillas (or corn tortillas, lightly fried)
  • 1 can (15 oz) refried beans
  • 1/4 cup water (to thin beans slightly)
  • 1 cup red enchilada sauce (or mild taco sauce)
  • 2 cups shredded Mexican blend cheese (or cheddar/Monterey Jack)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives (optional)
  • Oil for frying (or cooking spray if baking)

Method
 

Cooking Meat
  1. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and water, then simmer for about 5 minutes until thickened.
Preparing Beans
  1. In a small saucepan, warm the refried beans with 1/4 cup water, stirring until smooth and spreadable.
Crisping Tortillas
  1. Fried Method: Heat 2–3 Tbsp oil in a skillet. Fry tortillas one at a time until golden and crisp, about 1–2 minutes per side. Drain on paper towels.
  2. Healthier Method: Brush or spray tortillas lightly with oil. Bake at 400°F (200°C) for 5–7 minutes per side until crisp.
Assembling Pizzas
  1. Place one tortilla on a baking sheet. Spread a layer of beans, then a layer of seasoned meat.
  2. Top with another tortilla. Spread a spoonful of enchilada or taco sauce over the top.
  3. Sprinkle with cheese, then add diced tomatoes, green onions, and olives.
Baking
  1. Bake pizzas at 400°F (200°C) for 8–10 minutes, until cheese is melted and bubbly.
Serving
  1. Slice into quarters like a pizza and serve hot with extra taco sauce or sour cream if desired.

Notes

For a unique twist, add jalapeños or extra spices to your meat for a spicy kick. If storing leftovers, wrap tightly in foil or place in an airtight container for up to 3 days.
