  • 1/3 cup low sodium soy sauce (80 milliliters)
  • 1/4 cup packed brown sugar (50 grams)
  • 1 can medium pineapple chunks
  • 1 small Vidalia onion, chopped
  • 1 cup green pepper chunks

Preparation
  1. Dice the chicken into uniform bite-sized pieces for even cooking.
  2. Create the sauce by whisking together pineapple juice, brown sugar, and soy sauce until the sugar dissolves.
  3. Transfer the chicken chunks into the slow cooker, layering with pineapple chunks, chopped onion, and green pepper.
  4. Gently pour the prepared sauce over the layered chicken and vegetables.
Cooking
  1. Set the Crock-Pot to low heat and let it simmer for 4-6 hours, or use the high setting for 2-3 hours until chicken is fork-tender.
  2. Once cooked, thoroughly combine the contents to redistributing the sauce and caramelized bits.
