  • 2 cups cooked rice Cook according to package instructions.
  • 1 lb grilled chicken, sliced Grill until fully cooked.
  • 1 cup corn, grilled Grill until slightly charred.
  • 1/2 cup diced tomatoes Fresh or canned.
  • 1/4 cup chopped cilantro For garnish and flavor.
  • 1/4 cup crumbled feta cheese Can substitute with goat cheese.
  • 1 each avocado, sliced For topping.
  • 1 each lime, juiced Adds zesty flavor.
  • to taste Salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Cook rice according to package instructions.
  2. Grill chicken until fully cooked, then slice it up.
  3. Toss the corn on the grill until slightly charred.
Assembly
  1. In a bowl, combine rice, chicken, corn, tomatoes, and cilantro.
  2. Top off with feta cheese and avocado slices.
  3. Drizzle with lime juice, and season with salt and pepper.

Notes

For meal prep, leave out the avocado and lime juice until ready to eat. Store in an airtight container in the fridge for up to 3 days.
