Ingredients
  

For the crust
  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 2 cups cream cheese, softened Ensure it's softened for smooth mixing.
  • 1 cup powdered sugar Adjust according to taste.
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1 cup fresh strawberries, chopped Use real strawberries for best texture.
  • 1/2 cup strawberry sauce (optional) Drizzle before serving for an extra touch.

Method
 

Preparation
  1. In a bowl, mix the crushed graham crackers and melted butter until well combined.
  2. Press this mixture into the bottom of a lined baking dish to form the crust.
  3. In another bowl, beat the cream cheese until smooth.
  4. Add the powdered sugar and vanilla, mixing until everything is well combined.
  5. Carefully fold in the whipped cream until fully incorporated.
  6. Stir in the chopped strawberries.
Assembly
  1. Pour the cheesecake mixture over the crust and spread it evenly.
  2. Refrigerate for at least 4 hours or until everything is set.
  3. Cut into small bites and drizzle with strawberry sauce if desired before serving.

Notes

Store in an airtight container for up to five days in the fridge. Can be made two days in advance. For freezing, wrap tightly and store in an airtight container for about a month.
